This delicacy is a specialty of the islands of Sardinia and Sicily. The roe sack of the Mediterranean tuna is removed as soon as the female is caught. It is then pressed, salted and left to dry, often in the open air. It is then grated like a fine Parmigiano. The Sicilians call it uovo di tonno, and it is an incomparable delicacy. Bottarga is very flavorful and very aromatic; a little goes a long way. The Sardinians serve it simply, with spaghetti, extra-virgin olive oil, chopped garlic, parsley, and red pepper flakes - quick and oh so delicious.
